How Broadly Should You Draft an Arbitration Clause?

When drafting an arbitration clause, it’s advisable to consider the potential disputes the parties want to cover. Do they merely want to cover contract claims or do they want something broader in scope? For example, would they prefer to include or exclude tort and statutory claims?
