It seems everywhere one goes these days, people are talking food. Even law schools have embraced the new food movement, offering courses on food law with a handful establishing centers relating food and agriculture (disclaimer: I happen to lead one of these). Just a few years ago, the trend was to develop climate change courses and centers. One could chalk up the explosion in interest to fad and fashion. This would be a mistake.
